Summer’s Smoked Sausage White Bean Salad

Ever notice just how versatile sausage is and how it adds so much flavor and interest to almost every dish imaginable!  This recipe is no exception.  Serve chilled for best results.

Ingredients

—3 Links: Queen City Sausage—Smoked Sausage.  Diced or sliced

—2 Cans (14 OZ) Cannellini white beans.  Rinsed and drained

—2 Ears of corn—Microwave each one for 3 minutes.  Then, kernels sliced off

—1 Medium cucumber.  Diced

—5 Green onions.  Chopped

—3/4 Cup Banana peppers.  Diced

—1 Cup Cherry tomatoes. Sliced

—1/2 Cup Fresh basil.  Chopped

—6 OZ Pesto sauce

Directions

  1. Combine all of the ingredients in a large bowl.  Mix well

  2. Refrigerate covered until serving time
