Grilled Smoked Sausage Zucchini Orzo Salad

Ideal as a summer side dish or meal.  Hot or cold.  Delicious!  Works well on a flat top grill or stove top.

Ingredients

—3 Links: Queen City Sausage-Smoked Sausage.  Slice lengthwise into quarters.  Slice into small pieces

—1 LB. Orzo pasta.  Cook according to package

—2 Large Zucchini. Slice lengthwise into quarters.  Slice into small pieces

—3 Ears of corn.  Slice off of the cob

—4 OZ Goat cheese or blue cheese

—1/3 Cup Fresh basil.  Chopped

—2 OZ Olive oil

Dressing

—1/2 Cup Olive oil

—3 TBLS Lemon juice

—2 TBLS  Champagne vinegar

—2 TBLS Honey

—!/4 TSP Pepper

—1/4 TSP Salt

—3 Garlic cloves minced

Directions

  1. Fire up the grill to medium

  2. Cook the pasta on stove top

  3. Coat the griddle with olive oil

  4. Add the sausages, corn, zucchini, to brown

  5. In a large bowl, add the cooked pasta and the griddle contents once browned.  Add the dressing.  Top with cheese and basil

  6. Ready to serve
