Caramelized Sweet Potatoes With Smoked Sausage

Smoked sausage pairs well with most any vegetable.  Slow baked to absolute perfection.  A side of pure maple syrup seals the deal.

Ingredients

—5 Links: Queen City Sausage Smoked Sausage

—2 Large Orange sweet potatoes

—2 TBLS Olive oil

—1 TSP Smoked paprika

—1 TSP Garlic granules

—1/2 TSP Black pepper

—1 TSP Sea salt

—3 OZ Pure maple syrup

Directions

  1. Wash and dry the potatoes.  Slice them lengthwise, in half

  2. Line a baking sheet with parchment paper

  3. Large bowl, add the olive oil, paprika, garlic, pepper and sea salt.  Blend well

  4. Add the potatoes to the bowl and coat them throughly

  5. Place the potatoes, cut side down, to the baking sheet

  6. Pre-heat oven to 375 degrees F.  Add the potatoes to the oven and bake for 40 minutes.  Remove the baking sheet, add the sausage links, and bake for an additional 10 minutes

  7. Remove the baking pan and let cool for 40 minutes or so.  Do not dislodge the potatoes at this time

  8. Once cooled down, carefully lift the potatoes with a thin spatula, careful not to remove the caramelization in the potatoes

  9. Drizzle with maple syrup and serve
