Smoked Sausage Egg White Breakfast Cups—Mediterranean Style!

Super easy and incredibly delicious!

Ingredients

—2 Links: Queen City Sausage—Smoked Sausage.  Diced

—2 Cups Liquid egg whites

—2 Cups Spinach.  Chopped

—3 OZ Sun dried tomatoes

—1/2 Cup Green olives.  Chopped

—1/2 Cup Feta cheese crumbles

—2 Green onions.  Chopped

—Salt and pepper

—Cooking spray

Directions

  1. Spray a 12 cup muffin tin (silicon better) with cooking spray

  2. Fill each muffin space with sun-dried tomatoes, spinach, and olives

  3. Add the sausages

  4. Fill the muffin cups with the egg whites, just below the top

  5. Add the feta cheese to the top along with the green onions

  6. Bake in a pre-heated 350 degree oven for 25 minutes or so
