Smoked Cottage Ham Cavatappi Pasta Soup

This is super easy to make and delivers big on flavor!

Ingredients

—6 OZ Queen City Sausage Smoked Cottage Ham (Butt).  Sliced very thin. NOTE: You can substitute QCS sausage if desired

—4 OZ Cavatappi Pasta

—3 Stalks of celery.  Sliced

—3 Carrots.  Sliced

—1/2 White onion.  Diced

—2 TBLS Butter

—1 OZ Olive oil

—4 Cubes, Chicken bullion

—Optional: We added 4 OZ of rotisserie chicken chunks at the very end

—10 Cups water

Directions

  1. Cook the pasta according to package instructions.  Drain

  2. Large pot, medium-low heat.  Add olive oil.  Add onions, carrots, and celery to soften, not brown

  3. Add the water and simmer for a few minutes

  4. Add in the drained pasta

  5. Add the butter and bullion

  6. Let simmer for 20 minutes

  7. Cook on low for 40 additional minutes

  8. Once ready to serve add in the cottage ham
