Baked Peppers with Smoked Sausage Ginger Sauce

The senses delight as this dish begins to bake and the aromas permeate the kitchen.  This recipe has an Asian flare but can easily adjust to any sauce preference.

Ingredients

—2 Links: Queen City Sausage Garlic Franks or favorite QCS sausage.  Cut on the bias

—8 Mini Peppers

—4 Small Tomatoes.  Cut in half

—1/2 Onion.  sliced

—1” Piece Ginger.  Peeled and minced

—1 OZ Olive oil

—2 OZ Soy Vay Veri Veri Teriyaki Marinade and Sauce

—Coarse ground pepper

Directions

  1. Medium bake pan, apply the olive oil evenly.  Add the peppers, onions, tomatoes and sausages. Add a sampling of the marinade to lightly cover

  2. Bake in a 400 degree pre-heated oven for about 20 minutes

  3. Apply a second coating of the marinade to the baked items

  4. Add pepper and dust with the ginger

Note: Consider having a ramekin of extra sauce for dipping.

Yield: Two servings
