Mini Linguine Carbonara’s with Smoked Cottage Ham

These little pasta nests are packed with flavor and fun.  A perfect appetizer!

Ingredients

—6 OZ Queen City Sausage Smoked Cottage Ham.  Diced

—1/2 LB Linguine

—1/2 Cup Milk or cream

—3 Eggs

—Parmesan cheese

—1 TBLS Olive oil

—Coarse ground pepper

—1/2 TSP Italian seasoning (Optional)

Directions

  1. Small pan, medium low heat, add the olive oil and the cottage ham to slightly brown.  Do not over cook

  2. Prepare the linguine according to package instructions

  3. In a bowl, add the eggs, milk, pepper.  Blend throughly

  4. Grease a muffin pan and place the linguine to fill 3/4 of the openings.  Add one TBLS of the egg mixture to each

  5. Add in the cottage ham to each opening

  6. Grate fresh Parmesan cheese over each opening

  7. Bake for about 20 minutes in a preheated oven at 375 degrees F

  8. Sprinkle with Italian seasoning
