

Sicilian Pasta Salad with Smoked Sausage
Mediterranean influences combine with authentic craft sausage for summer time fun!
Ingredients
—3 Links-Queen City Sausage-Smoked Sausage. Cut in half lengthwise and slice into pieces. Sausage is fully cooked and packed with flavor. Browning is optional
—8 OZ Penne pasta. We used mini-penne
—1/2 Cup Olives. Green or black. Halved
—1 Cup Cherry tomatoes. Halved
—1 Cup Red cabbage. Chopped
—1/2 Cucumber. Diced
—2 TBLS Fresh basil
—3 TBLS Extra virgin olive oil
—2 TBLS Red wine vinegar
—3 Cloves of garlic minced
—1/2 Cup Ricotta cheese. Crumbled
Directions
Cook penne according to package instructions. Al dente is preferred. Rinse with cold water to cool completely
Large bowl, add the cool pasta, tomatoes, olives, sausages, cabbage, cucumber, and basil
Small bowl, mix olive oil, red wine vinegar, garlic, salt and pepper for dressing
Add the dressing to the large bowl ingredients and mix well to coat
Add the cheese to the top and serve
