Caprese Stuffed Avocados with Spicy Smoked Sausage Crumbles

A refreshingly simple way to celebrate springtime!

Ingredients

—2 Links: Queen City Sausage, Hot Smoked Sausage

—2 Large Avocados.  Cut in half

—1/2 Cup Cherry tomatoes.  Halved

—1/2 Cup Fresh Mozzarella.  Pieces

—Balsamic Glaze:  2 TBLS Brown sugar.  1/2 Cup Balsamic vinegar.  Heat to reduce  slightly

—2 OZ Olive oil

—Salt and pepper to taste

—Fresh Basil leaves

Directions

  1. Mix the caprese filling: Olive oil, tomatoes, sausage crumbles, and cheese.  Blend.

  2. Add the filling to the avocados.  Top with glaze.  Salt and pepper to taste
