Baked Smoked Sausage and Black Bean Tacos

Ingredients

—4 Links, Queen City Sausage - Hot Smoked Sausage.  Sliced

—8 (5”) Yellow corn tortillas warmed and immediately filled

—1 Small onion.  Diced

—1 Avocado.  Sliced

—3 Jalapeño peppers

—1 Can (15.5 OZ) Black beans.  Drained and rinsed

—1 Cup Shredded Sharp cheddar cheese

—1 TBSP Taco seasoning

—4 TBLS Olive oil

—Salt and pepper

—Optional: Sour cream, cilantro leaves, lime wedges, and hot sauce

Directions

  1. Large skillet add 2 TSP olive oil.  Med-low heat.  Add onions, red pepper, salt, and cook until sausage is browned and vegetables are softened

  2. Add taco seasoning and 1 TSP olive oil.  Stir in well

  3. Add beans, pinch of salt, and 1/4 cup of water to simmer briefly then reduce.  Mash the beans slightly and blend well.  Remove from heat.

  4. Warm the tacos according to package instructions.  Fill immediately with mixture and top with cheese.  Fold

  5. Take a large, parchment lined sheet pan.  Add the filled tacos to the pan and bake in a preheated oven-heated oven at 425 degrees F for about 8 minutes to brown.  Flip the tacos and bake for about 5 more minutes
