Szechuan Sausage & Chicken with Rice

Ingredients

·         3 Links—Queen City Sausage-Smoked Sausage.  Sliced ¼ inch

·         6 Boneless chicken thighs.  Cut into cubes

·         1 Red bell pepper.  Mini slices

·         3 TBL. Corn starch

·         1 TBS Olive oil

·         4 Cloves garlic.  Minced

·         5 TBL Soy sauce

·         1 ½ TBL. White vinegar

·         ¼ Cup of water

·         1 TSP Sugar

·         Cayenne pepper to taste

·         4 Green onions.  ½ inch diagonal pieces

Directions

1.       Add sausage and chicken to a plastic bag with corn starch to coat.  Heat oil in a wok or large skillet over med-high heat

2.       Add the sausage, chicken, and garlic to the skillet, stirring constantly to slightly brown.  Stir in the soy sauce, vinegar, sugar and water

3.       Cover and cook until the chicken is fully cooked.  Usually, 3-5 minutes

4.       Stir in the green onion and cayenne pepper and cook uncovered for about 2 minutes

5.       Serve over white rice
