Cast Iron Souffle Pancake

Ingredients

·         1 Link; Queen City Sausage Smoked Sausage.  Sliced ½ inch thick

·         1 LB 80/20 Ground beef

·         3 Buns

·         6 Slices Sharp cheddar cheese

·         4 OZ Lettuce

·         2 OZ Mayo

·         2 OZ Hot sauce

·         2 OZ Mustard

·         ½ Onion: Pureed

·         1 Tomato—sliced

·         1 OZ Olive oil

Directions

1.       Mix the mayo, hot sauce, mustard, and onion

2.       Large cast iron skillet, medium-low heat, add the olive oil, Add the buns, toast the buns and set aside

3.       Portion the ground beef into 6 balls.  Add 3 ground beef balls to the skillet.  Mash the balls down with a spatula.  Brown and flip.  Set aside

4.       Add the remaining 3 ground beef balls.  Smash down, flip and add the sliced sausages

5.       Add sauce to the patties in the skillet and add the additional cooked patties on top of skillet burgers

6.       Add cheese to the patties

7.       Build the sandwich: Add lettuce, tomatoes, patties and serve

Yield: 3 Burgers
