Summer Pasta Salad with Grilled Smoked Sausage

Ingredients
4 Links favorite Queen City Sausage. Recipe used QCS Brats and Metts. Grilled
10 OZ Tri-Color Rotini Pasta
5 OZ Soft mozzarella cheese. Diced
1 Jar roasted red peppers. Chopped
2 Cups Cherry tomatoes. Sliced
½ Cup black olives. Sliced
¼ Cup parsley. Chopped
½ Red onion. Chopped

Dressing
¼ Cup red wine vinegar
¼ Cup Olive oil
2 Cloves garlic. Minced
1 TSP Honey
1 TSP Dijon mustard
½ TSP Fresh ground pepper
Yields 4-5 Servings


Instructions
Cook the pasta according to package instructions for al dente. Make the dressing by blending all ingredients. Drain the pasta and place in a medium bowl. Allow the pasta to cool slightly. Slice the grilled sausages ¼’ thick and halved. Add all ingredients into the bowl with the pasta. Add the dressing. Refrigerate for ½ an hour to chill.
