Beef Smoked Sausage Pineapple Boats

Ingredients
4 Links—Queen City Sausage Beef Smoked Sausage (Or any QCS favorite), sliced into 1/4 “ pieces
1 Cup Rice-uncooked. Follow package instructions
4 OZ Soy Vay Verri Verri Teriyaki Sauce—Low sodium
4 TBS Orange marmalade
1 Large Pineapple
All cut out sections of each pineapple. These should be about 1.5” squares
2 OZ Olive oil
½ TSP-EA.: Ground Pepper, Garlic powder
Yields 2 Servings


Instructions
Slice the pineapple in half. Take a sharp knife and cut out a rectangle base in the pineapple. Then cut 3 vertical lines and 4 horizontal lines, all lines 1” thick. Now scoop out the small squares of pineapple with spoon. Cook the rice according to package. Medium skillet, medium low heat, add olive oil and sausages to brown. Add pineapple pieces to blend and lightly brown in the oil. Add Teriyaki sauce and blend. Add pepper and garlic powder. Add marmalade and stir thoroughly. Place the stir fry and rice into the pineapple and serve.
