The Gourmet Sausage Sandwich

Ingredients
2 Links/Butterflied–Favorite Queen City Sausage. We used the new premium Hot Dog-Family Pack
6 Slices rye bread
9 OZ Frozen spinach, thawed and drained
8 OZ Cream cheese, softened
2 Eggs
2 OZ. Olive oil
1 Tomato, sliced
½ TSP Onion powder
½ TSP Ground black pepper
Yields 2-4 Servings


Instructions
Medium size, non-stick skillet. Medium heat. Add olive oil to skillet. Brown sausages. Toast bread in toaster or skillet. In a medium bowl, add the spinach and cream cheese. Add the onion powder and pepper. Fry 2 eggs, sunny side up. Suggestion: Cut sandwiches in half, down the middle.
