Cottage Ham & Egg Panini

Ingredients
1 Medium size Queen City Sausage Smoked Cottage Butt (aka Ham). About ¾ Lb. Sliced super thin
8 Slices of thick bread
¼ LB Favorite cheese. We used Jarlsberg
6 Eggs
4 OZ Gourmet mustard
4 OZ Butter
2 OZ Sun dried tomatoes
Salt and pepper to taste
Serves 4


Instructions
Medium skillet, medium low heat. Add butter. Crack eggs, beat and make an omelet in the warmed skillet. Add sun dried tomatoes. Remove and cover omelet to hold heat. Cut into 4 sections. Back to the skillet. Medium low heat. Add butter. Take the 8 slices of bread and apply mustard to all slices. Place 4 slices in the skillet. Add the omelet sections, cheese, and cottage ham. Add the remaining 4 slices on top.. Add a heavy skillet on top of the bread to somewhat flatten the sandwich. Flip and repeat.
