Smoked Cottage Ham Omelet

Ingredients
8 OZ Queen City Sausage Smoked Cottage Butt (Ham). Sliced thin
6 Large eggs
4 OZ Shredded sharp cheddar cheese
¼ Onion. Diced
3 OZ Sun dried tomatoes
2 OZ Olive oil
2 OZ Butter
1 TBS Corn starch
Salt and pepper to taste
Serves 2-3


Instructions
Medium skillet, medium-low heat. Add olive oil, sundried tomatoes, and onions. Brown. Add cottage ham slices, just to gently heat. Remove and set aside covered. In a bowl, beat the eggs and add the corn starch. Note: Corn starch is a chef secret to fluffy eggs. Add butter to the skillet and add the beaten eggs. Quickly add the cottage ham-onions-dried tomatoes to lay on top of the eggs. Cover with foil for about 4 minutes. May require 2 spatulas to flip.
