Spicy Hot Beef Smoked Sausage & Mushroom Rice

Ingredients
1 PK Queen City Sausage Hot Beef Smoked Sausage—14OZ–diced
2 Cups rice-wild, brown, or white. Follow package instructions to cook
1 LB Baby portabella mushrooms–sliced
½ Bell pepper–sliced
½ onion—diced
½ Cup water
1 Ea. 15.25 OZ. Can of black beans
4 OZ Veri Veri Teriyaki marinade and sauce—Low sodium
2 OZ Olive oil
1 TBS Coarse ground pepper
Yields 5-6 Servings


Instructions
Medium skillet, medium-low heat. Add oil and sausages to brown. Add onions, bell pepper, ground pepper, and mushrooms. Simmer. Add water to hydrate mushrooms. Cover to hold heat. Add black beans and Teriyaki sauce. Add cooked rice and blend gently and thoroughly. You may also elect to keep the rice separate and add skillet ingredients as a topper.
