Guinness Brat & Beef Stew
Inspired by family visiting Dublin, Ireland. They enjoyed so many delicious foods but raved about this dish.
Ingredients
—2 Links: Queen City Sausage—Any variety—Recipe used Bratwurst
—2 LBS. Beef chuck. Cut into 1.5-2” pieces
—2 Cups Baby potatoes. Cut in 1/2 or quarter
—2 Cups Mushrooms. Sliced thick
—2 Cups Onions. Diced
—6 OZ Bacon. Slice into 1.5-2” pieces
—1 Cup Carrots. Cut into chunks
—1 14.5 OZ Guinness beer
—4 TBLS Tomato paste
—1 Cup Celery. Sliced across
—4 Cloves garlic. Minced
—3 Cups Beef stock
—3 TBLS AP flour
—3 Sprigs thyme
—3/4 TSP Each—Salt and pepper to taste
—2 TBLS Olive oil
Directions
Heat oil in a large stock pot.
Salt and pepper the beef pieces and add to the pot to brown, then remove and set aside
Medium heat, add oil if needed. Add onions, mushrooms, and garlic. Cook 4 minutes
Add the bacon and brats. Continue cooking for about 5 minutes
Add carrots and celery. Continue cooking 3-4 minutes
Add the flour to the pan and stir well
Add the Guinness beer. Blend well. Add the beef stock and tomato paste
Microwave the potato slices 1.5 minutes and add to the pot
Add the browned beef + juices and thyme
Cover the pot and let gently simmer for about 2 hours. Then remove the lid and let it condense for about an hour
