Camper’s Dinner Skillet—Cincinnati Style

Actually, dinner is mis-leading simply because this meal pleases every day part.  Even breakfast.  We call it Cincinnati Style because there are three local, Cincinnati iconic meats that unify the delicious experience contained in this cast iron skillet, namely, Smoked sausage.  Goetta.  Cottage Ham.

Ingredients

—3 Links: Queen City Sausage—Smoked Sausage.  Cut into 4-5 pieces each

—1 LB: Queen City Sausage—Goetta

—5 OZ Queen City Sausage—Smoked Cottage Ham (Butt).  Chunked

—3-4 Eggs

—1 Cup: Cherry or grape tomatoes

—3 Medium Yukon potatoes or Redskin.  Quartered

—1/2 Cup Mozzarella cheese.  Shredded

—1 Small onion.  Sliced

—2 TBLS Olive oil

—1 TSP Garlic powder

—Salt and pepper to taste

—1 TBLS Parsley

Directions

  1. Large cast iron Skillet.  Medium heat.  Add the oil, onions and goetta. Potatoes next.  Make sure your slices are small enough to brown and soften.  Cover the skillet to hold flavor, moisture, and heat

  2. Add the goetta to brown

  3. Add the sausages

  4. Make room for the eggs and add

  5. Add the cottage ham

  6. Add the spices

  7. Add the cherry tomatoes

  8. Lightly dust with shredded cheese

  9. Sprinkle with parsley flakes
