Wicked Hot Cornbread Sausages

Ingredients

—1 PK Queen City Sausage—Wicked Jalapeño Hot Smoked Sausages

—8 El Paso Stand Up soft tortillas

—1 Cup Flour

—1/2 Cup Cornmeal

—1 Cup Buttermilk

—1/2 TSP Baking soda

—1 TSP Baking powder

—1/2 Cup Butter.  Melted

—2 Eggs

—2 TBLS Mustard

—1/4 Cup sugar

—2 Jalapeños.  Sliced

—8 OZ Sharp cheddar cheese.  Shredded

—Salt and pepper

Directions

  1. Add the tortillas to a 13” X 9” baking dish.  6 across X 2 on the side.  Bake in a preheated over at 425 degrees F for 6 minutes

  2. Mix the cornmeal, flour, baking powder, baking soda, salt, and pepper, in a large bowl

  3. Take an additional bowl, mix the buttermilk, eggs, butter, sugar, and mustard

  4. Combine both bowls of ingredients into one

  5. Add the cheese

  6. Add some of the mixture into each tortillas.  Next place the sausages, and cover from the center with additional batter

  7. Bake in the preheated oven (425F) for about 20-25 minutes.  Rotate the pan 1/2 way in the baking process to cook evenly

  8. Top with the jalapeños
