Tuscan Smoked Sausage Pasta Salad

One of the sure signs of summer, grill outs, and picnics is when the classic pasta salad shows up.  This recipe takes all of the classic ingredients and blends in craft sausage.  The result is delicious and refreshing.

Ingredients

—2 Links: Queen City Sausage-Smoked Sausage.  Sliced

—4 OZ Queen City Sausage—Cottage Ham.  Sliced thin

—20 OZ Tortellini pasta.  Cook according to package

—1 Cup Olives.  Sliced in half

—1 Cup Mozzarella balls.  Sliced in half

—1 Cup English cucumber.  Sliced in half

—1 Small Red onion.  Sliced or diced

—1/2 Cup Golden raisins or Craisins

Dressing

—1/2 Cup Olive oil

—2 Cloves garlic.  Minced

—Salt and pepper

—1/2 TSP Each: Dried oregano.  Dried thyme.  Red chili flakes

—2 TBLS Balsamic vinegar

—1 TBLS Honey

Directions

  1. Cook the pasta and then rinse in cold water.  Drain.  Set aside

  2. Make the dressing

  3. Add the meats, vegetables, Mozzarella, and raisins to the pasta

  4. Add the dressing and gently blend all ingredients together
