Smoked Hot Sausage Tortilla Soup

Ingredients

—4 Links: Queen City Sausage Hot Smoked Sausage.  Sliced

—2 Medium White onions.  Sliced thin

—2 TBLS Olive oil

—6 Garlic cloves.  Diced

—32 OZ Chicken stock

—14.5 OZ Fire roasted diced tomatoes

—Salt and pepper

—1 TSP Smoked paprika

—1 Pinch Cayenne pepper

—1/2 Cup Cilantro. Chopped

—1 Avocado.  Sliced

—Lime wedges

—1 TSP Ground and toasted cumin seeds

Directions

  1. Large Dutch oven, medium-low heat.  Add olive oil.  Add onions and salt.  Lightly brown.  About 5 minutes

  2. Stir in tomatoes and cook.  Let liquid reduce slightly

  3. Add chicken stock.  Bring to a boil.  Reduce the heat to simmer for about 3 minutes

  4. Add in the sausages and spices.  Stir throughly

  5. Serve with tortilla chips and avocado slices and chopped cilantro
