Hot Smoked Sausage Quinoa Medley

Very pleased with how quickly this recipe came together delivering great taste and eye appeal!

Ingredients

—3 Links Queen City Sausage-Hot Smoked Sausage.  Chopped

—12 OZ Quinoa.  Uncooked.  Rinsed.  Drained

—32 OZ Chicken stock

—10 OZ Frozen corn

—1 Small onion.  Chopped

—1 Green bell pepper.  Chopped

—1 Red bell pepper or mini-sweet peppers.  Chopped

—2 TSP Olive oil

—4 Garlic cloves.  Chopped

—8 OZ Mozzarella shredded cheese

—1 Large Tomato.  Chopped

—2 TSP Each: Salt, pepper, chili powder, and ground cumin

Directions

  1. Dutch oven.  Medium-low heat.  Add oil.  Add sausages to brown.  Set aside, covered

  2. Add onions to soften, follow with peppers.  Set aside with sausages once softened

  3. Add quinoa to the pot and slowly add in the chicken stock.  Simmer for about 20 minutes.  Stir often

  4. Add in the corn, peppers.  Blend well

  5. Add in all spices, garlic, and sausages.  Add to a serving bowl

  6. Top with cheese and tomato chunks
