Buffalo Smoked Sausage Bowls

There is a bit of the classic wings approach here.  Delicious!

Ingredients

—1 PK: 6 Links-Queen City Sausage—Smoked Sausage

—4 Cups Quinoa.  Cook according to package

—Crumbled blue cheese

—1/2 Cup Mayonnaise

—1/2 Cup Buttermilk

—2 TBLS Chopped fresh chives

—2 TBLS Chopped dill

—1 TBLS Garlic powder

—TBLS Onion Powder

—2 TBLS Hot sauce

—2 Medium carrots.  Shaved

—2 Celery stalks.  Chopped

—1 TBLS Olive oil

Directions

  1. Cook the quinoa according to package

  2. Medium skillet.  Add olive oil.  Brown the sausages.  Then cut into 1/4 strips and cut 2 links into pieces

  3. Sauce: Add buttermilk, mayo, chives, dill, garlic powder, salt, pepper, and onion powder in a medium bowl and whisk

  4. Add the cooked quinoa to serving bowls

  5. Place the sausages in a bowl and coat with the hot sauce

  6. Add the coated sausage strips to the quinoa filled bowls

  7. Top with celery, carrots, and sauce

  8. Top with blue cheese crumbles
