

Texas Tailgate Twinkies
These fun treats originate in Texas but we added Cincinnati sausage to the mix!
Ingredients
—2 Links: Queen City Sausage-Hot Smoked Sausage or favorite. Quartered lengthwise and cut in half for 12 pieces
—12 Large Jalapeño peppers. Cut a slit 1/2 way through the top of the pepper, followed by another slit lengthwise, forming a “T.” Spoon handle out the interior stems and seeds
—1 LB. Bacon. 12 Slices, thick cut
—1 Pack Cream cheese. Softened. 8 OZ
—1 Can Corn (15 OZ). Drained
—1 Can Black beans. Rinsed and drained
—1.5 TSP Favorite meat rub seasoning
—1 Onion (Small). Diced
—5 Cloves Garlic. Minced
—4 Ounces of BBQ sauce
Directions
Mix the cream cheese, onions, garlic, corn, black beans, and rub in a bowl
Gently open the “T” slit pepper and fill with the bowl mixture
Top the pepper opening with the sausage link
Wrap each of the filled peppers with the bacon
Apply BBQ sauce to each of the wrapped peppers
Place the peppers on a parchment lined baking sheet
Cover the baking sheet with aluminum foil, tightly
Bake in a pre-heated, 400 degree F oven for about 40 minutes.
Remove the foil and return to the oven and broil on low for about 3 minutes to char the bacon
