Summer Squash Smoked Sausage Kebabs with Chimichurri Sauce

The perfect plating of iconic sausages with summer vibes!

Ingredients

Kebabs (4)

—2 Links Queen City Sausage, Smoked Sausage.  Cut into 3/4” pieces

—2 Links Queen City Sausage, Bratwurst.  Cut into 3/4” pieces

—1/2 Zucchini cut into 1” half moons

—1/2 Yellow squash cut into 1” half moons

—1/2 Red onion.  Cut into 1” quarters

—4 Cups of cooked rice

Chimichurri Sauce

—1 Cup Fresh cilantro

—1/3 Cup Fresh parsley

—1 Medium shallot—about 1/2 cup sliced

—2 Medium garlic cloves

—1/2 Cup Extra virgin olive oil

—1/4 Cup Red wine vinegar

—1 TBLS Lime juice

—1/2 TSP Salt

—1/2 TSP Red pepper flakes

—1/4 TSP Black pepper

Directions

—Pulse the garlic, shallot, cilantro, and parsley in a food processor until finely chopped

—Add contents to a small bowl and add the olive oil, vinegar, lime juice, salt, pepper, red pepper flakes and stir

—Prepare rice according to package directions

—Using wooden skewers, assemble the onions, squash, and sausages.  Add to the grill or griddle to brown and soften

—Serve the skewers over the bed of rice, adding the Chimichurri sauce as a topping
