Stove Top Smoked Sausage Panini

Super simple! Very tasty!

Ingredients

—2 Links—Queen City Sausage, Smoked Sausage.  Hot or Mild.  Sliced lengthwise into strips

—1 Red bell pepper.  Sliced into strips

—1 Zucchini or squash.  Sliced

—1 Small Egg plant.  Sliced into rounds

—1 Small Onion.  Slices

—Olive oil

—4 Slices Sourdough bread

—4 OZ Fresh Mozzarella cheese.  Pieces

—2 TBLS Pesto

—Balsamic Glaze: 2 TBLS Brown sugar.  1/4 Cup Balsamic vinegar.  Heat to reduce slightly

—Salt and pepper to taste

Directions

  1. Medium-low heat, non-stick skillet.  Add olive oil, sausages, onions, red peppers, zucchini, and eggplant.  Set aside

  2. Assemble the panini:  Spread pesto on one side of each slice of bread.  Layer 2 pieces of bread with cheese and add-on all vegetables.  Salt and pepper. Sprinkle balsamic glaze

  3. Place the lids on the sandwiches.

  4. Add more olive oil to the skillet.  Medium-low heat.  Add the sandwiches to melt the cheese and serve.

Yield: 2 Hearty Panini Sandwiches
