Smoked Sausage Egg & Avocado Biscuits

Ingredients

—3 Links: Queen City Sausage, Hot Smoked Sausage.  Diced

—6 Frozen biscuits.  Pillsbury Grande or favorite

—6 Eggs

—1/2 Cup Cheddar cheese.  Shredded

—1 Whole avocado.  Diced

—1 Cup Spinach

—1 TBLS Lemon juice

—1 TBLS Olive oil

—1 TBLS Hot sauce

—Mayo

—Salt, pepper

Directions

  1. Bake the biscuits according to package instructions

  2. Mix the eggs, hot sauce, salt, and pepper

  3. Toss lemon juice over the avocado to keep fresh

  4. Large non stick skillet (Square if possible), add olive oil and brown the sausage

  5. Add the beaten egg mixture to the skillet, medium-low heat.  You want to slowly let the eggs fully cook without flipping.  Cover

  6. Just before finished, add the avocados and then the spinach to wilt

  7. Cut the omelet into 6 squares or sections

  8. Apply mayo to both sides of the biscuits and add the eggs

YIELD: 6 Biscuit sandwiches
