Goetta Hash Brown Tailgate Omelet

Want to captivate a hungry Game Day audience?  Make this recipe on your grill or stove top!

Ingredients

—1 LB Roll Queen City Sausage Premium Goetta.  Sliced

—1 LB Shredded potatoes

—6 Eggs.  Beaten

—4 OZ Shredded cheddar cheese

—1 Onion.  Chopped

—1 Bell pepper.  Chopped

—1 TSP Grippo’s Gourmet Bar-B-Q spice

—Salt and pepper

—4 OZ Olive oil or favorite

Directions

  1. Preheat the grill (Flattop) to medium heat.  Apply a light coat of oil to brown the goetta slices

  2. Apply more oil and add the frozen shredded potatoes.  Let throughly brown

  3. While potatoes are about half of the way done, add the onions and the bell peppers to the grill

  4. Once the hash browns are cooked on the underside, add the egg mixture to the hash browns.  Use the spatula to push in all sides to form a rectangle.  Apply salt and pepper

  5. Add the onions and bell peppers followed by the cheese and goetta

  6. Cut the omelet in half and fold over each section

  7. Dust the omelet with Grippo’s spice

YIELD:  4-6 Servings
