Sausage Crumble Cucumber Summer Salad

Ingredients

—2 Links: Queen City Sausage, Smoked Sausage—Hot or Mild

—2 Cups Corn.  Frozen-thawed, or fresh.  10 OZ

—1 LB. Cucumbers.  Halved lengthwise and thinly sliced

—2 OZ Parmesan cheese

—3 TBLS Sour cream

—2 TBLS Mayonnaise

—3 TBLS Fresh lime juice

—1/4 TSP Garlic powder

—1/2 TSP Cayenne pepper

—1 Medium shallot.  Thinly sliced

—2 OZ Olive oil.  For browning

—Kosher salt to taste

—Ground pepper

Directions

  1. Dice the 2 sausage links.  Add to a non-stick skillet to brown.  Set aside

  2. Brown the corn slightly.  Let cool

  3. In a large bowl, add cheese, sour cream, lime juice, mayo, peppers, and garlic powder.  Stir well

  4. Stir in the corn, cucumbers, and sausage crumbles

  5. Add salt to taste
