Eggstreme Cottage Ham Biscuits and Smoked Sausage Gravy

Cincinnatians love their smoked sausage and the flavorful cottage ham.  This recipe brings the two together in a quick, delicious, and fun breakfast.

Ingredients

—3 Links: Queen City Sausage-Smoked Sausage.  Crumbles

—8 OZ Queen City Sausage—Smoked Cottage Ham.  Sliced thin

—6 Buttermilk biscuits

—6 Eggs

—2 OZ Olive oil

—1.5 TBLS All purpose flour

—1.5 Cups Whole milk

Directions

  1. Medium, non-stick skillet.  Medium-low heat.  Add olive oil.  Add the sausage crumbles to brown

  2. Stir in flour slowly to form roux.  Whisk throughly.  Reduce heat to low

  3. Slowly add in the milk.  Whisk constantly.  Bring to a boil, then reduce to low.  Add more milk if needed depending on thickness desired

  4. Fry the eggs in a separate skillet

  5. Assemble: Bottom biscuit, Cottage ham, gravy, egg, biscuit lid and serve
