SMOKED SAUSAGE WITH GRILLED PICKLE RELISH

Ingredients

—6 Links-Queen City Sausage Beef Smoked Sausage or favorite

—5 Bread and Butter pickle spears

—3 TBSP Olive oil

—1 Cup white onions.  Diced

—1/2 Cup Distilled white vinegar

—2 TBSP Sugar

—1 TBSP Yellow mustard seeds

—2 TBSP Parsley, finely chopped

—6 Buns

— Sea salt

Directions

  1. Sauté the pickle spears in olive oil or grill.  Lightly char.  Remove and set aside.  Once cooled, finely chop

  2. Using the same pan, add oil, pinch of salt.  Medium heat.  Add the onions.  Let soften.  Add the vinegar, sugar and mustard seed.  Simmer for about 5 minutes. Remove from heat and stir in the pickles.  Let cool

  3. Blend in the parsley and salt

  4. Grill the sausages.  Place in buns and top with the relish
