SMOKED SAUSAGE GNOCCHI SOUP

Ingredients

·         I PK-14 OZ Queen City Sausage – Smoked Sausage or favorite--sliced

·         1 32 OZ Chicken broth

·         1 14 OZ Can—diced tomatoes, undrained

·         1 Can—6 OZ Tomato paste

·         1 PK—16 OZ Gnocchi

·         6 OZ Fresh baby spinach

·         ½ Cup Parmesan, freshly grated

·         ½ Tsp. Ground pepper

·         ½ TSP Salt

·         2 OZ Olive oil

Directions           

1.       Large, 4 QT. Pot—add olive oil, sausages to brown

2.       Add chicken broth, tomatoes and paste.  Bring to a boil, add the gnocchi.  Reduce heat.  Simmer until the gnocchi floats to the top

3.       Add spinach and pepper

4.       Serve with additional cheese as topping
