HICKORY SMOKED COTTAGE HAM OMELET

Ingredients

·         6 OZ Cottage Ham, sliced

·         4 Large eggs

·         4 OZ Mozzarella cheese, shredded

·         ½ Onion, sliced

·         2 TBLS Butter

·         2 TBLS Olive oil

·         Salt and pepper to taste

Directions

1.      Large non-stick skillet.  Medium heat.  Sautee the onions in olive oil and set aside

2.      Reduce the heat to medium-low

3.      Add the butter to coat the skillet

4.      Add the scrambled eggs, add the sauteed onions, spread out the cheese, top with the cottage ham

5.      Gently roll the omelet or simply flip or fold over

Yield: 2 Servings
