COPYCAT CRACKER BARREL MEATLOAF WITH SMOKED SAUSAGE

Ingredients

·         2 Links—Queen City Sausage-Smoked Sausage or favorite.  Quartered

·         6 OZ Smoked Cottage Ham (Butt).  Thin sliced.  Optional

·         2 LBS Ground beef

·         ½ Onion.  Diced

·         1 Green pepper sliced.  We used red

·         1.5 Cups of Ritz crackers.  Crushed

·         ¾ Cups Sharp cheddar cheese.  Shredded

·         3 Eggs

·         ½ Cup of milk

·         1 TSP Salt

·         ½ TSP Black pepper

Glaze Ingredients

·         ¾ Cup Ketchup

·         2.5 TBL Brown sugar

·         1.5 TSP Yellow mustard

Instructions

1.      In a large bowl, combine ingredients: ground beef, eggs, bell pepper, onion, crackers, milk, cheese, salt and pepper.  Mix well, but do not over mix

2.      Preheat oven to 350 degrees

3.      Place mixture into loaf pan(s)

4.      Bake for 30 minutes.  While baking, mix the glaze ingredients

5.      Remove meatloaf from oven and apply the glaze and the sausage strips

6.      Place meatloaf back into the oven for another 40 minutes.  Use thermometer for internal temperature of 165 degrees F.  Remove from oven and let rest for 10 minutes
