BLOOMING SMOKED BOLOGNA

Ingredients

·         3 LB Center cut section of a 6.0 LB Queen City Sausage Garlic Bologna Roll

·         ¼ Cup of Montgomery Inn’s BBQ Sauce

·         ¼ Cup of favorite mustard.  We used Kroger Horseradish Mustard

Directions

1.      Take a sharp, thin bladed knife and slice vertically and horizontally at the top of the bologna. Create the checkered look.  Slice about ½ way down

2.      Combine the mustard and BBQ sauce and apply to the top of the bologna generously

3.      Smoke the blooming bologna for 2 hours at 225 degrees F

4.      To serve, finish slicing the bologna all the way through, for delicious straws/strips

5.      Use extra mustard/BBQ sauce for dipping

Note: You can also deep fry the sliced bologna in a Dutch oven at medium/high heat, instead of smoking.  Do not cut the slices quite as deep.  Use your favorite oil about 1 ½” deep and move the bologna around in the oil very carefully
