BEEF SMOKED SAUSAGE SUMMER TORTELLINI SALAD

Ingredients

·         3 Links Queen City Sausage SK Beef Smoked Sausage.  Diced. Note: Links are fully cooked but can be browned if desired

·         12 OZ of Cheese tortellini cooked using package directions.  Drain and allow to cool

·         2 Cups Cherry tomatoes.  Slice in half

·         1 CUP Marinated artichoke hearts.  Sliced

·         ½ CUP Olives.  Sliced

·         ½ CUP Sun dried tomatoes.  Chopped

·         ½ Red onion.  Small pieces

·         4 OZ Mozzarella.  Sliced into bite sized chunks

·         2 Cloves Garlic.  Minced

·         ¼ CUP Pesto

·         4 TBS Extra virgin olive oil

·         3 TBS Red wine vinegar

·         Salt and pepper to taste

Directions

1.       Large bowl; Add the cooked tortellini, sausages, tomatoes, mozzarella, artichokes, sun dried tomatoes, red onions, olives, and set aside

2.       Small bowl: whisk vinegar and pesto

3.       Pour the dressing over the tortellini mixture.  Blend gently.  Season with pepper and salt

4.       Store in the refrigerator.  Serve chilled

Yield: 4-6 Servings
