BEEF SMOKED SAUSAGE KENTUCKY BURGOO

Ingredients

·         4 Links—Queen City Sausage—Beef Smoked Sausage.  Sliced

·         ½ Chicken.  Bone in

·         8 OZ Bacon.  Pieces

·         8 OZ Water

·         ½ Onion.  Slices

·         ¼ Red pepper. Sliced

·         2 medium carrots.  Sliced

·         2 Celery stalks.  Sliced.

·         3 Cloves of garlic.  Minced

·         12 OZ Canned sliced tomatoes

·         15 OZ Corn

·         8 OZ Potatoes.  Diced

·         ¼ Cup brown sugar

·         Bunch of thyme

·         2 TBS Worcestershire sauce

·         4 OZ Olive oil

·         1 TBS Corn starch

·         Salt and pepper to taste

Directions

1.       Medium-large pot.  Medium-low heat.  Add the olive oil, onions, garlic, red pepper, carrots, and celery to caramelize. Add the chicken to sauté.  Add the bacon

2.       Add the tomatoes, corn, and potatoes

Add the Worcestershire sauce, thyme, brown sugar, salt, and pepper.  Add water as needed

3.       Simmer for at least one hour

4.       Take out the chicken and remove the bones.  Return the chicken to the pot

5.       Add in corn starch as desired to thicken

Yield: 5-6 Servings
