Reimagining Smoked Cottage Ham in Asian Bowl

Ingredients
I Each-Medium Queen City Sausage Cottage Ham. About 1 LB. Slice very thin
2.5 Cups rice + water. Follow package instructions
1 Cup spinach (use fresh or gently heat to soften)
6 TBS Low sodium soy sauce
8 OZ Orange marmalade
4 Large eggs
1 OZ Olive oil

Instructions
Prepare rice according to the package. Mix the soy sauce and marmalade. Warm it. Poach 4 eggs. In a medium skillet, low heat, gently warm the cottage Ham slices. Assemble the bowls: rice, cottage ham slices, and egg. Sauce on side or apply.
