Goetta Hash Topped with Jarlsberg Cheese

Ingredients
3/4 LB Queen City Sausage Goetta. Browned and crumbled
1 LB Yukon potatoes. Diced
8 OZ Jarlsberg Cheese
5 OZ sliced mushrooms
½ Red Onion. Sliced
¼ Cup Orange and red peppers. Diced
3 OZ Olive oil
1 TSP Coarse ground pepper
¼ TSP Sea Salt
8 Large eggs.
Yields 4-5 Servings

Instructions
In a medium non-stick skillet, medium heat, add goetta in chunks or slices to brown and crumble. Remove and set aside. In a medium non-stick skillet, medium-low heat, add olive oil to coat and add the diced potatoes. Add the onions, mushrooms, peppers, salt, and pepper. Stir constantly to thoroughly brown. Just before the skillet contents are ready, add the browned goetta. Blend thoroughly. Reduce the heat to low and cover. In a separate skillet, fry eggs, sunny side up. The eggs are the base for the Goetta Hash. Add the Goetta Hash to top the eggs. Apply a generous amount of Jarlsberg cheese as a topping.
