Shrimp N Cheesy Grits with Wicked Hot Sausage

Ingredients
4 Links—Queen City Sausage Wicked Ghost Hot Smoked Sausage. Cubed
6 OZ Shrimp.
1 Cup of Weisenberger Yellow Grits, or Any Whole Grain/Long Grain Grits

1 ½ to 2 Cups Sharp Shredded Cheddar Cheese
4 Cups of Water
3 Cloves of Fresh Garlic, Minced
2 Beaten Eggs
3 TBS Butter (Melted)
1/2 TSP Salt
3 TBS Green Onions Diced


Instructions
Boil water, add grits, garlic and salt, stir, cover and simmer for 20 minutes (stirring occasionally so they do not stick to the pot) then remove from heat. Add Beaten Eggs–(at Room Temperature or Add Some Hot Grits to Temper). Add Butter. Add Cheese. Combine. Thoroughly and Pour into Greased Casserole Dish. Bake at 350 Degrees for 45 Minutes to an Hour Uncovered (Until Top is Set and Slightly Browned). Sautee the Wicked Hot Sausage Cubes, Shrimp and Green Onions, in Lemon Butter. Add as the Topping.
