Reimagining Old Fashioned Smoked Cottage Ham

Ingredients
1 LB. Queen City Sausage Cottage Butt (Smoked Pork Shoulder Butt) sliced very thin
1 Can, 15.25 OZ Black Beans
1 PK, 8.5 OZ Seeds of Change Quinoa & Brown Rice
16 OZ Bag Blue Corn Tortilla Chips or favorite


Instructions
Medium skillet, medium-low heat. Add black beans. Do not drain. Microwave the rice as directed in the opened pouch. Add the rice. Add the sliced cottage ham. Cover. Careful not to overcook the cottage ham. Just gently warm and serve. Ok to stir all ingredients or layer as we did.
