Homestyle Smoked Sausage Chicken Noodle Soup

Ingredients
4 Links-Queen City Sausage, Beef Smoked Sausage, or any favorite QCS—sausage
2 ½ LBS Chicken. Recipe used 2 each, bone-in ½ chickens. Note: The bones flavor the broth immensely. Cut chicken into pieces
8 Cups of chicken broth
6 Cups of water. Add water as needed during the cooking process
2 Cups of egg noodles
2 stalks of celery, diced
3 cloves of minced garlic
1 onion, diced
2 bay leaves
4 TBS Butter
1 TSP Each of Sea salt and coarse ground pepper
1 Cup of Fresh spinach
Yields 6 Servings


Instructions
In a large pot, add the chicken stock. Medium-high heat. Add the chicken pieces and bring to a boil. Immediately turn down the heat to low. Add celery, onion, carrots, bay leaves, butter, salt, pepper, and garlic. Simmer for 20 minutes, then continue to cook on low for 1 hour. Remove the chicken. Remove the meat from the bones. Return the chicken to the pot. Add the noodles, smoked sausage and lastly, the spinach. Ready to serve.
