Goetta with Crepes

Ingredients
1/2 LB Queen City Sausage Goetta. Sliced
1 ½ Cups of Whole milk
1 Cup All-purpose flour
4 OZ Blueberries as a garnish
3 OZ Pure maple syrup. Highly recommend sourcing the pure maple syrup.
4 Large eggs to serve (Optional)
2 Large eggs for batter
2 OZ Butter
1 TBS Sugar
1 TBS Confectioner sugar as a topping
¼ TSP Salt
Yields 2-3 Servings


Instructions
In a medium sized bowl, add all dry ingredients and whisk. In the center of the flour create a space for the two eggs. Whisk. Let sit for 30 minutes. In a medium, non-stick pan, fry the goetta slices to brown thoroughly on both sides. Fry eggs too. For Crepes: Use a medium non-stick pan, ideally a round crepe pan, medium-low heat. Add butter. Add two scoops of batter to make one crepe at a time. Flip to heat both sides. Only slightly brown. Serve immediately.
