Asian Smoked Sausage Fruit Medley

Ingredients
1 PK – 14 OZ Queen City Sausage Smoked Sausage or any Queen City sausage variety.
14 OZ Sliced Fresh Fruit—Pineapple, Strawberries, and Blueberries. Add other fruit if desired as well
1 ½ Cups of White Rice
1 Medium Onion—Sliced
8 OZ Pineapple/Soy based marinade. We used Rothschilds Roasted Pineapple &
Habanero
3 OZ Olive oil
1 TSP Coarse ground pepper
Yields 4-5 Servings


Instructions
Cook the rice according to the package instructions. Medium skillet, medium-low heat—Slice the sausage links on the bias into ¼” pieces. Add the olive oil. Brown the sausages. Add the onion slices to the skillet. Once the rice is ready, and just before serving, add the marinade and fresh fruit. Note: Just gently warm the fruit. Add the rice to each plate as a base and top with the skillet contents.
