Smoked Sausage Greek Salad

Greek salads are magical.  The ingredients are colorful and when smoked sausage is added, the protein and flavor increases too.  See for yourself.

Ingredients

—2 Links: Queen City Sausage-Smoked Sausage.  Sliced

—4 OZ Queen City Sausage-Cottage Ham.  Thin sliced

—8 OZ Cherry tomatoes.  Cut in half

—1/2 Red onion.  Sliced

—3/4 Cup olives

—5 OZ Feta cheese crumbles

—1/2 English cucumber.  Sliced

—8 OZ Fresh Mozzarella balls

—1 Bunch-leafy green lettuce

Dressing

—1/4 Cup Extra-virgin olive oil

—3 TBLS Red wine vinegar

—1/2 TSP Dijon mustard

—1 Garlic clove.  Minced

—1/4 TSP Sea salt

—1/2 TSP Dried oregano

—1/2 TSP Ground black pepper

Directions

  1. Set out 4 large salad bowls.  Add the lettuce, tomatoes, cucumbers, mozzarella balls, olives, smoked sausages, cottage ham, onions, and top with feta cheese.

  2. Top with freshly made dressing and serve.
