Smoked Sausage Frito Chili Pie

Ingredients

—1 PK Queen City Sausage—Smoked Sausage.  Sliced

—1 LB Ground beef

—1 Can-15 OZ Diced Fire Roasted Tomatoes

—1 Bell pepper or poblano peppers.  Diced

—1 Sweet onion.  Diced

—4 Cloves garlic.  Minced

—1 TBLS Chili powder

—3 TBLS Taco seasoning

—1/2 Cup water

—1 Can-15OZ Kidney beans.  Drained

—1 Cup Shredded cheddar cheese

—1 Cup Shredded Monterey Jack cheese

—2 Green onions.  Sliced

—Sour cream

Directions

  1. Large skillet, medium-low heat, brown the ground beef half way, then add the onions to finish browning and soften the onions.  Stir constantly

  2. Stir in garlic, taco seasoning, water, chili powder, tomatoes, beans.  Simmer for 10 minutes

  3. Preheat oven to 400 degrees F

  4. Spray a 9 X 13” casserole dish with olive oil

  5. Layer the dish with Fritos in the bottom.  Add 1/2 of the meat mixture.  Sprinkle the 2 cheeses and then repeat these steps, beginning with the chips

  6. Bake for about 20 minutes.  Top with green onions and sour cream
