GOETTA WITH BUCKWHEAT WAFFLES

Ingredients

·         1 LBS Queen City Sausage Goetta

·         2 Cups Buckwheat flour

·         2 Cups Almond milk

·         3 Eggs.  Separated

·         ½ TSP Baking soda

·         ½ TSP Sea salt

·         1 TSP Pure vanilla

·         3 TBS Powdered sugar

·         2 TBS Butter, melted

·         Yogurt

·         Pure Maple syrup

·         Fresh berries

Directions

1.      Combine buckwheat flour, baking soda, sea salt, and sugar in a large bowl.  Whisk

2.      Slice the goetta into patties and brown.  Medium-high heat

3.      Add the Almond milk, butter, and egg yolks.  Whisk to combine

4.      In a separate bowl, whisk the egg whites until firming, then fold into the batter

5.      Turn on the waffle pan.  Once heated, add the batter and follow pan instructions
