MEXICAN STREET CORN DIP WITH SMOKED BEEF SAUSAGE

Ingredients

·         3 Links—Queen City Sausage’s Beef Smoked Sausage.  Diced

·         8 OZ Cream cheese.  Room temperature

·         1/3 Cup Sour cream

·         1/3 Cup Greek yogurt

·         ¾ Cup Crumbled cotija cheese

·         2 Cups Corn

·         2 TBS Chili powder

·         2 TSP Smoked paprika

·         1.5 TSP Cayenne pepper

·         1 Yellow onion.  Chopped

·         Sea salt and pepper

·         2 Cloves garlic.  Diced

·         4 TBS Butter

·         1 Ear of corn, grilled-baked.  Kernels removed from the cob

·         ¼ Cup Fresh cilantro.  Chopped

Directions

1.       In a small bowl, mix the spices and a pinch of salt

2.       Medium skillet, medium-low heat, add the sausages to brown.

3.       Add the onions to lightly brown and soften.  Add the corn and garlic.  Add 1 TSP of the spice mixture

4.       Reduce the heat to low.  Mix in the cream cheese and blend.  Add in the sour cream. 

5.       In a separate sauce pan, melt the butter until golden.  Add 3 TSP of the remaining spice mix and salt.  Add the yogurt

6.       Spoon the dip into a serving bowl.  Top with the yogurt butter. 

7.       Slice the ear of corn and drizzle the corn on top of the dip
